The main scientific and technological objective of the project is the development of an integral approach to optimal food process operation and control, and the implementation and validation through reliable and novel sensing systems and advanced simulation tools to some processes representative of food preservation and storage operation. To that purpose, the following partial objectives should be pursued:
1. Optimization of a robust and reliable sensing architecture
2. The development and application of new concepts and tools from model building and simulation to produce dynamic models able to capture the relevant process features.
3. The development of an intelligent control framework to operate the complete plant and to take optimal decisions directly using the quality information provided by the on-line quality sensors. The framework will include:
3.1 A low level regulatory control layer to maintain the different process variables at the desired operation levels (set points)
3.2 An optimal quality control layer, for dynamic real time optimization.
4. The demonstration of the applicability and efficiency of the concepts, methods, paradigms and tools developed on application cases representative of food preservation and storage
